Buttermilk-Marinated Grilled Chicken Sandwich with Sour Pickles

One of my favorite sandwiches of all time is the fried chicken sandwich with sour pickles.  But frying food at home is for special occasions. When you are craving a Buttermilk Chicken Sandwich with sour pickles, this grilled version hits the spot! 

Serving Size - 4 people

Ingredients

1 cup buttermilk

2 skinless, boneless chicken breasts, halved

Fresh ground black pepper

1 teaspoon Kosher salt

1 tablespoon Olive oil

4 plain hamburger buns

2 tablespoons melted butter

8 dill or sour pickle slices or more to taste

Instructions

Grilling Method: Direct/Medium Heat

Pour buttermilk in a shallow bowl. Add chicken breasts (4 total pieces) and let soak 30 minutes, turning occasionally. Mix pepper and salt. Remove chicken from milk and season liberally on both sides. Brush with a thin coating of olive oil and let sit 5 minutes.

Place chicken directly on the cooking grate and grill 7-8 minutes on each side. Turn once halfway through the cooking time. Do not try to turn earlier or the chicken may stick to the grate.

Meanwhile, lightly butter the buns, and grill until heated through! Place two pickles on each bun, and place a hot breast on each! Serve immediately with pink lemonade.
